Isinglass finings, made from the swim bladders of fish and commonly used to rapidly clarify cask ale, have no place in our brewery. We clarify our beer using time and temperature, and believe that some natural haze is not just “acceptable”, in many beers it is actually a good thing. Hops produce haze, yeast produces haze….if you strip it all out in pursuit of a “pin bright” beer, you strip out the flavour and aroma too. Isinglass also shortens the shelf-life of beer, and in our experience can lead to unpleasant flavours and aromas. Finally, we want our beer to be available to as many people as possible, and that includes vegetarians!
